I’ll never forget the little old ladies waiting for their treats at my school’s annual Mayfair—a carnival, bake sale, and silent auction. The days leading up to Mayfair were exhausting as a child (I could only imagine how exhausted my mother was now, working full-time, getting her masters, and baking at least 100 impeccable treats). My job was assembling and labeling boxes, and tying off bags with ribbon (curling the ribbon too, of course).
There was one year my mother decided to take it easy on herself (and her dutiful workers), by opting not to make Pineapple-Upside Down Cake. When we arrived to the fair, and finished unloading the treats (typically at least two van fulls), a little old lady found her Pineapple-Upside Down Cake amiss, “Oh dear, that is my favorite! I look forward to it every year!” By the goodness of her heart (or that Catholic guilt), my mom drove straight home and made her a Pineapple-Upside Down Cake.
Not that I blame that woman of course, boxed Pineapple-Upside Down Cake is just not the same.
